In the heart of Los Altos de Jalisco, in the city of Arandas, Real de México was born—a brand that has become a symbol of Mexican tequila tradition and authenticity. Its founder, a true agave farmer at heart, shares a deep connection with the agave plant, the very soul of the region.
From the early days working in the agave fields, a love for this plant grew into a profound passion. Blue agave, which matures slowly under the sun of Arandas, has fostered a special bond with its growers over time. More than just a resource, agave became a living heritage passed down through generations.
The tequila is crafted from mature agave grown in the Los Altos region of Jalisco, a land known for its mineral-rich soils and cool climate, with chilly nights that allow the agave to absorb carbon dioxide and store carbohydrates. These fertile red and deep brown soils retain moisture, helping the plants endure long droughts. As a result, tequilas from this region are sweeter with tropical flavor notes.

Cultivation of Our Agaves
The journey of Real de México tequila begins with the planting and cultivation of hijuelos—small Agave Tequilana plants—carefully separated from a mother plant in the red soils of Los Altos de Jalisco.
jIMA
Once the agave reaches maturity, typically between 5 and 7 years, the plants develop the ideal characteristics for tequila production and achieving the best flavor. The jimador, using a traditional coa, skillfully removes the leaves and extracts the heart, or piña, from the soil. This process, known as jima, leaves a portion intact, preserving the robust body of the tequila.
AGAVE

The piñas are meticulously selected with a focus on their reducing sugars to ensure the highest quality agave juice. Once authorized and sampled, the agave is received in the loading yard of the ovens, where the piñas are cut lengthwise into halves, thirds, or quarters, depending on their size.
COOKING
The piñas are manually loaded into masonry ovens, where steam softens their texture and converts their carbohydrates into fermentable sugars, creating a unique flavor and process. During cooking, the agave nectar is also extracted.

MILLING
In this stage, the cooked piñas are processed to extract sugars. Using a mill and treated water, a sweet, fermentable juice is produced.
FERMENTATION
This step is crucial in defining much of the flavor and aroma that characterize our tequila.
DISTILLATION
Tequila is traditionally distilled to obtain a product of the highest quality.
AGING
Originally, 100% blanco tequila obtained directly from distillation is stored in new white American oak barrels, where it develops a complex flavor and aroma after aging.
BOTTLING
Each bottle of Real de México is carefully bottled at Destilería Morales and undergoes rigorous inspection during the bottling and labeling process. This ensures our signature high quality and the safety of the final product.
