The Origin of Our Flavor

From the earliest years working in the agave fields, love for this plant transformed into passion. Blue agave, which grows slowly under the sun of the Arandas region, cultivated over time a special relationship with its producers. More than a simple resource, agave became a living heritage, passed down from generation to generation.

Our tequila is crafted from mature agave grown in the Highlands of Jalisco. This region is characterized by mineral-rich soils and cool temperatures, influenced by cold nights that allow the agave to absorb carbon dioxide and store carbohydrates. In addition, the fertile red and deep brown soils retain moisture, enabling the plant to withstand long periods of drought. As a result, tequilas produced in this land are naturally sweeter and display tropical flavor notes.

PRODUCTION PROCESS BLUE AGAVE CULTIVATION Everything begins in the fields of Jalisco, where Tequilana Weber Blue Agave is cultivated for 6 to 8 years. During this time, the plant develops its heart, or piña, accumulating the natural sugars that will eventually give birth to tequila. The honest work of skilled hands that keep tradition alive. Quality HARVESTING (JIMA) HARVESTING (JIMA) PRODUCTION PROCESS Once mature, the jimador cuts away the agave leaves (pencas) using the traditional steel coa, exposing the piña. This manual process requires precision, experience, and a deep understanding of the plant. The honest work of skilled hands that keep tradition alive. BLUE AGAVE CULTIVATION COOKING PRODUCTION PROCESS The piñas are slowly cooked in masonry ovens or autoclaves to convert their starches into fermentable sugars. This step defines part of the aromatic profile and the natural sweetness of the tequila. COOKING Fire reveals the natural sweetness of agave. HARVESTING (JIMA) MILLING PRODUCTION PROCESS Once cooked, the agave is crushed to extract its juice—known as fresh mosto. Traditionally, this is done using a stone tahona or mechanical mills. This liquid contains the sugars that will later be fermented. MILLING From the heart of the agave is born the liquid essence of tequila. COOKING FERMENTATION PRODUCTION PROCESS The mosto is placed in wooden vats or stainless steel tanks, where natural yeasts transform the sugars into alcohol. This process lasts several days and is essential in defining the aromas and flavor notes of the final product. Patience and time: the secrets of authentic fermentation. FERMENTATION MILLING DISTILLATION PRODUCTION PROCESS The fermented liquid undergoes two distillations in copper or stainless steel stills.
The first distillation (ordinario) removes impurities.
The second distillation (rectification) provides purity, clarity, and the true character of the tequila.

PRODUCTION PROCESS The tequila is rested in white oak barrels for months or years, developing an amber color along with notes of wood, vanilla, and spices.
Blanco: unaged, pure and bright.
Reposado: aged from 2 to 12 months in barrels.
Añejo: aged from 1 to 3 years.
Extra Añejo: aged for more than 3 years.
